- Tapioca is made in France from cassava starch and brings softness and smoothness to desserts and soups. It successfully thickens and binds liquids and creams making them creamier. Available as organic.
- Pearls of cassava allow a visual and an original texture. They will colour easily, bring esthetics to desserts, pudding or bowls. They can imitate fish eggs or replace alginate pearls.
- Native cassava starch is used to give texture in many applications. Declared "clean label", it permits the development of a long, soft and creamy texture when cooked. The resulting gel is shiny, translucent with a neutral taste and colour.
